As I welcome the vibrant colours and fresh scents of spring, Ifind myself drawn to the abundance of seasonal ingredients that nature has to offer. From crisp asparagus to juicy strawberries, there's a whole world of flavour waiting to be explored in the springtime.

One of my favourite recipes that captures the essence of spring is the delightful Lamb and Mint Kofta. This dish combines the richness of lamb with the refreshing taste of fresh mint, creating a perfect harmony of flavours that is sure to tantalise your taste buds.

To make these succulent koftas, I start by mixing together minced lamb, finely chopped onion, crushed garlic, chopped mint, and a blend of aromatic spices including cumin, coriander, and paprika. The mixture is then shaped into small sausage-like koftas and cooked to perfection on a grill or skillet, or if you’re brave enough, maybe even the BBQ, until they are beautifully browned on the outside and juicy on the inside.

The result is a dish that is not only bursting with flavour but also celebrates the seasonal ingredients that make springtime so special. The combination of tender lamb and fragrant mint is a match made in heaven, creating a dish that is perfect for a light and refreshing meal on a sunny spring day.

I love serving these Lamb and Mint Koftas with a dollop of creamy yogurt sauce, warm pita bread, and a crisp Greek salad made with a few simple ingredients: tomatoes, cucumber, red onion and delicious, creamy feta cheese. The contrast of flavours and textures creates a truly satisfying meal that is both comforting and invigorating.

Lamb and Mint Kofta Recipe:

Ingredients:

- 500g lamb mince

- 1 small onion, very finely chopped

- 2 cloves of garlic, crushed

- 2 tablespoons fresh mint, chopped

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon paprika

- Salt and pepper to taste

- Olive oil for cooking

 

Instructions:

1. In a large bowl, mix together the lamb mince, chopped onion, crushed garlic, chopped mint, ground cumin, ground coriander, paprika, salt, and pepper. Make sure all the ingredients are well combined.

2. Take a small portion of the mixture and shape it into a smallsausage-like shape, forming the kofta.

3. Heat a grill pan or skillet (or BBQ) over medium heat andlightly oil the surface with olive oil.

4. Place the koftas on the grill pan or skillet and cook for about 4-5 minutes on each side, or until they are cooked through and are nicely browned on the outside.

5. Serve the lamb and mint koftas hot with a side of yogurt sauce, pita bread, and a fresh Greek salad.
